Ingredients
– 50ml Rockfield Spiced Rum
– 10 fresh mint leaves
– 25ml lime juice
– 2 tsp sugar
– Soda water to top
– Ice
– Mint sprig and lime wedge for garnish
Method
- Muddle the mint leaves and sugar together in a glass.
- Add lime juice and Rockfield Spiced Rum to the glass.
- Fill the glass with ice.
- Top with soda water.
- Gently stir to combine the ingredients.
- Garnish with a mint sprig and lime wedge for a cool, crisp finish.
